  2. Maple Syrup Pie

  7. Pastry for 2-crust pie

  8. 1 c maple syrup

  9. 1/2 c water

  10. 3 tbsp cornstarch

  11. 2 tbsp cold water

  12. 1/4 c nuts -- chopped

  13. 1/2 cup of water for 5 minutes. Blend the

  14. cornstarch with the 2 tablespoons of water and add to the syrup. Cook,

  15. stirring constantly, until mixture is smooth and transparent. Add the

  16. butter and chopped nuts and let it cool. Bake between two crusts at 400

  17. degrees F for 25-30 minutes.

  18. - - - - - - - - - - - - - - - - - - NOTES : Of all the maple syrup pies I've made, none was ever as good as

  19. this one. The recipe dates from Colonial days when crushed wheat was used

  20. to thicken the mixture.

  21. Lei's Notes: This book had a mis-print in this recipe, as no quantity of

  22. maple syrup was listed...in fact the whole ingredient was missing. I'm

  23. guessing here on the 1 cup of maple syrup based on the Creamy Maple Syrup

  24. Pie, which contains 1 cup.
