  1. 8 ounces sharp Cheddar cheese, shredded (2 cups)

  2. 1 stick (1/2 cup) butter or margarine (not spread), slightly softened

  3. 11/2 cups all-purpose flour

  4. 1/2 teaspoon ground red pepper (cayenne)

  5. 1/4 teaspoon salt

  6. Garnish: paprika, chopped fresh parsley, sesame seeds or poppy seeds

  1. Process cheese, butter, flour, cayenne and salt in a food processor until mixture forms a ball.

  2. Divide in half. Roll each half on a lightly floured surface into a 10-inch log. Wrap separately in plastic wrap and refrigerate until firm, at least 4 hours or up to 1 week.

  3. Heat oven to 350°F. Have cookie sheet(s) ready.

  4. Cut logs in 1/4-inch-thick slices. Place about 1 inch apart on ungreased cookie sheet(s). Sprinkle with one or more of the garnishes. Bake 12 to 15 minutes until set and edges are golden brown. Remove immediately to a wire rack to cool. Store airtight.

  5. Store: Room temp, 1 week; freezer, 3 months
