  1. 2 cups rolled oats (old-fashioned oatmeal)

  2. 1 cup whole wheat flour

  3. 1/2 to 3/4 cup firmly-packed light brown sugar

  4. 1/4 cup flax seed meal (ground flax seeds)

  5. 1/4 cup wheat germ

  6. 1 tsp. cinnamon

  7. 1/2 tsp. kosher salt

  8. 1 large egg

  9. 1/2 cup canola oil or vegetable oil

  10. 1/2 cup honey

  11. 1 tsp. vanilla extract

  12. 1/2 cup shelled pistachio nuts

  13. 1/2 cup dark chocolate chips or chunks

  1. Preheat the oven to 350 degrees F. Spray a 9 x 13 baking dish generously with cooking spray.

  2. Place the rolled oats, whole wheat flour, brown sugar, flax meal, wheat germ, cinnamon and salt in a large mixing bowl, and stir together until well-combined. Make a well in the center, and set aside.

  3. Whisk together the egg, oil, honey and vanilla. Pour into the center of the dry ingredients, and mix well.

  4. Spread the mixture into the prepared pan, leaving about 1/4 inch border all the way around. This will make the granola bars easier to cut. Bake on the center rack for 18-25 minutes, until the bars are light golden brown and firm to the touch.

  5. Let the bars cool for 10 minutes, then cut into rectangles. Do not let the bars cool completely. They are actually easier to cut when cooled only partially. Store in an air-tight container.
