  1. Serves/Makes:4 people

  2. 2 lbs (.9 kg). fresh salmon filet

  3. 1/2 fresh pinnapple

  4. 1 small zuccini

  5. 1 red bell pepper

  6. 1 yellow bell pepper

  7. 1 lemon

  8. 4 tbls butter

  9. 2 tspn mild italian dressing

  10. Pinch of salt & pepper

  11. Preparation

  12. Cut salmon into four seperate filets.

  13. Slice zuccini into 1/8 inch slices.

  14. De-core peppers and slice longways.

  15. Slice pinneapple into 1/2 inch pieces.

  16. Place a salmon filet onto a 8 inch piece of foil.

  17. Make two 2 inch cuts into the filet and insert butter and sprinkle with salt & peper

  18. 1/2 Pour tspn dressing onto salmon.

  19. Place sliced peppers and zucinni on top of salmon.

  20. Line edges of salmon with 6-8 pieces of pinneapple.

  21. Place 2 thin lemon slices on salmon filet.

  22. 350 degree (175 C.) oven for 20 minutes
