  1. Summertime Main-Dish Salad

  2. 2 1/2 cups fully cooked low-fat ham, cubed

  3. 1/3 cup chopped onion

  4. 2 garlic cloves, minced

  5. 1 teaspoon dried oregano

  6. 1 teaspoon dried thyme

  7. 1/4 teaspoon cayenne pepper

  8. 1/4 teaspoon pepper

  9. 1 tablespoon oil

  10. 1/3 cup cider or red wine vinegar

  11. 4 cups cooked rice

  12. 3 cups cooked chicken, diced

  13. 2 celery ribs, thinly sliced

  14. 1/2 cup green pepper, julienned

  15. 1/2 cup sweet red pepper, julienned

  16. 2 green onions, sliced

  17. 1 pint cherry tomato, whole

  18. In a skillet over medium heat, saute the first 7 ingredients in

  19. oil until vegetables are tender. Remove from heat. Stir in vinegar.

  20. Cool for 5 minutes. In a bowl, toss the rice, chicken, celery,

  21. peppers and onions. Stir in the ham mixture. Cover and chill for at least 2 hours. Garnish with tomatoes.

  22. NOTES : I like to add Italian dressing. It can be served on the

  23. side for individual preferences.
