  1. 4 tbsp oil

  2. 1/2 cup spring onions (including the greens)

  3. 2 garlic (lehsun) cloves , finely chopped (lehsun)

  4. salt to taste

  5. 1 cup bean sprouts

  6. 1/2 cup sliced paneer (cottage cheese)

  7. 3 cups cooked rice noodles

  8. 2 tbsp roasted peanuts , chopped

  9. 3/4 tsp chilli powder

  10. 1 tsp chilli flakes

  11. 2 tsp sugar

  12. 1 tbsp soy sauce

  13. 1 tbsp lemon juice

  1. Heat 2 tbsp of oil in a microwave safe bowl, add the paneer, toss well and microwave on high for 3 minutes. Keep aside.

  2. Add the remaining 2 tbsp of oil in a microwave safe bowl and microwave on high for 1 minute.

  3. Add the spring onions, salt and bean sprouts, mix well and microwave on high for 2 minutes.

  4. Add the prepared paneer and all the remaining ingredients mix well and microwave on high for 1 minute.

  5. Serve immediately.

  6. To cook 3 cups of rice noodles, soak 300 gm (3/4 packet) of raw rice noodles in boiling water for 10 to 15 minutes
