  1. Blueberry Cream Cake

  2. 2 cups all-purpose flour

  3. 3/4 cup granulated sugar

  4. 1/4 cup packed light brown sugar

  5. 2 teaspoons baking powder

  6. 1 teaspoon grated lemon rind

  7. 1/4 teaspoon salt

  8. 1/4 teaspoon cardamom

  9. 1/4 teaspoon nutmeg

  10. 3 large eggs

  11. 1 1/2 cups blueberries

  12. 1 1/2 cups whipping cream

  13. 350 degrees. Grease a 9-inch tube pan or springform

  14. pan fitted with a center tube.

  15. Combine flour, both sugars, baking powder, lemon rind and spices

  16. in large bowl of an electric mixer. Blend on low speed. Add eggs

  17. and mix on low speed. Add the cream; increase to high speed and mix until light, about 2 min. Fold in blueberries with a rubber

  18. spatula.

  19. Transfer to prepared pan. Bake until a toothpick inserted in the

  20. 50 to 55 minutes. Cool in pan

  21. 5 minutes,

  22. then remove from pan. Cool on wire rack.
