    1. Ingredients (serves 2)

    2. 1 tablespoon olive oil

    3. 1/2 red capsicum, finely chopped

    4. 80g shaved honey ham, thinly sliced

    5. 1 quantity Basic omelette (see related recipe)

    6. 1 tablespoon chopped fresh flat-leaf parsley mixed salad, to serve

    1. Heat oil in a medium frying pan over medium heat. Add capsicum and ham. Cook, stirring occasionally, for 5 minutes or until capsicum softens. Remove to a bowl. Cover to keep warm.

    2. Follow steps 1, 2 and 3 of Basic omelette (see related recipe).

    3. Top omelette with capsicum mixture and parsley. Fold omelette in half to enclose filling. Cut in half. Slide onto plates. Serve with salad.
