  1. Frosted Pumpkin Cookies

  2. Yield: 5 dozen

  3. 1 c butter or margarine; softened

  4. 3/4 c granulated sugar

  5. 3/4 c brown sugar; packed

  6. 1 lg egg

  7. 1 c canned pumpkin

  8. 2 ts vanilla extract

  9. 3 c baking mix

  10. 1 ts ground cinnamon

  11. 1/2 ts ground nutmeg

  12. 1 1/2 c pecans; chopped, toasted

  13. prepared homestyle frosting or prepared cream cheese frosting; 12-16 ozs.

  14. Heat oven to 350F. In large mixer bowl, beat butter, sugar, and brown sugar until light and fluffy. Add egg; beat well. Add

  15. pumpkin and vanilla. Add baking mix, cinnamon and nutmeg; beat on

  16. low speed to combine. Stir in pecans. Place tablespoonfuls of

  17. dough about 2 inches apart on greased baking sheets. Bake for 10-12 min. or until golden brown. cool on baking sheet for 2 min.

  18. Remove to wire rack to cool completely. Frost tops of cookies with

  19. vanilla frosting. Garnish with toasted pecans if desired.
