  1. 1 cup uncooked quick oatmeal

  2. 1 cup buttermilk

  3. 1 egg , slightly beaten

  4. 2 tablespoons margarine , melted and cooled

  5. 1/4 cup flour

  6. 1 tablespoon granulated sugar

  7. 1/2 teaspoon baking powder

  8. 1/2 teaspoon baking soda

  9. 1/4 teaspoon cinnamon

  10. 1 dash salt

  11. 1/2 teaspoon vanilla or 1/2 teaspoon other extract

  1. Combine the oats and buttermilk in a bowl. Cover and refrigerate overnight.

  2. In the morning, add the egg and margarine.

  3. Stir just to blend.

  4. Sift dry ingredients together and add to wet mixture along with the extract.

  5. Stir to moisten.

  6. If too thick, add extra buttermilk.

  7. Cook on a sprayed griddle or skillet til bubbles appear, then flip and cook about the same amount of time.

  8. Serve with syrup.
