  1. 8 ounces Dried pasta - I used mixture of pastas, you can use anything

  2. 2 chicken breasts , cooked and diced (You could use dark or white meat or a combination)

  3. 2 Tablespoons extra virgin olive oil

  4. 2 cloves garlic , minced

  5. 1 small onion chopped

  6. 1 green bell pepper , chopped

  7. 1 jalapeno pepper , seeds removed and minced

  8. 1 small tomato chopped

  9. 1 ounce parmesan cheese

  10. salt and pepper to taste

  1. boil the pasta as directed on the box and drain well.

  2. now,add 2 Tablespoons Olive Oil to 12-inch skillet. Place on stove top burner and turn heat to Medium.

  3. Add garlic and onion. Saute until onion becomes changes color about 4 minutes.

  4. Add green bell and jalapeno peppers and cook for 3 minutes.

  5. Add diced chicken.

  6. add salt and pepper to taste.

  7. now, add your cooked, drained pasta to the skillet.

  8. Add tomatoes and gently toss. Cook all ingredients for 4-5 minutes.

  9. Top with freshly grated Parmesan cheese, if desired.

  10. Feel free to add in additional spices such as parsley.

  11. Transfer to serving bowl and serve immediately.
