  1. 1/2 Beef - trimmed (2-1/2 to 3 lbs)

  2. 2 tablespoons 30ml Olive oil

  3. 1 tablespoon 15ml Cracked black pepper Cilantro Sauce

  4. 1 cup 16g / 0.6oz Cilantro leaves

  5. 1/2 cup 20g / 0.7oz Parsley leaves

  6. 2 Limes - juice and zest only

  7. 1 Garlic clove - crushed

  8. 1 tablespoon 15ml Dijon mustard

  9. 1 1/4 cups 78g / 2.8oz Cornichons

  10. 1 teaspoon 5ml Ground coriander

  1. Recipe Instructions Preheat oven to 450F. Rub fillet with olive oil and pepper. Roast 20 to 25 minutes for rare. Cool; refrigerate. Serve cold with cilantro sauce. CILANTRO SAUCE: Combine all ingredients in a blender and process until leaves are roughly chopped and ingredients are blended. Refrigerate until ready to serve.
