  3. 1 pound ground beef -- lean

  4. 1/2 cup chopped onion

  5. 2 tablespoons soy sauce -- low sodium if desired

  6. 2 cups zucchini slices

  7. 1 cup diced tomato -- large dice

  8. 1 packet sweetener

  9. 1/2 cup water

  10. 1/2 teaspoon salt and pepper -- each 1/2 teaspoon ground ginger

  11. How to Prepare:

  12. 7-8 minutes. Add zucchini and water, stir well, then cover. Cook

  13. 5 minutes, stirring occasionally. Add tomatoes and sweetener, cook

  14. 2 or 3 minutes more or until tomatoes just warm through and start to wilt.
