  1. 8 oz 227g Goat cheese - softened

  2. 1/4 cup 36g / 1 1/3oz Chopped nicoise olives

  3. 1 Red pepper - roasted, peeled, Seeded and chopped

  4. 1 tablespoon 15ml Finely-chopped fresh thyme Salt - to taste Freshly-ground black pepper - to taste

  5. 4 Boneless chicken breasts - pounded thin (large)

  6. 2 tablespoons 30ml Olive oil Smoked Chile-Cilantro Sauce - (see recipe)

  1. Recipe Instructions Preheat grill. Mix together the goat cheese, olives, red pepper and thyme in a small bowl and season with salt and pepper to taste. Lay each breast out and fill with the cheese mixture. Brush the breasts with the olive oil and season with salt and pepper to taste, secure with toothpicks. Grill for 8 to 10 minutes or until golden brown and cooked through. This recipe yields 4 servings.
