  1. 1/2 cup 118ml Orange juice

  2. 1/4 teaspoon 1 1/3ml Salt

  3. 6 Carrots - cut 1/4" thick

  4. 1 teaspoon 5ml Orange rind

  1. * Carrots are to be pared and sliced 1/4 inch thick.

  2. In a sauce pan, bring orange juice and salt to a boil. Add carrots. Simmer covered 5 minutes. Uncover. Cook 8 to 10 minutes until most of the liquid has evaporated. Stir in orange rind.
