  1. 3 tablespoons 45ml Extra-virgin olive oil

  2. 2 tablespoons 30ml Garlic cloves - chopped (large)

  3. 2 tablespoons 30ml Chopped fresh thyme leaves - plus sprigs

  4. For garnish

  5. 1 Radicchio lettuce - shredded

  6. 1 Large can white cannellini beans -

  7. 1 lb 1 - drained well

  8. Salt - to taste

  9. Freshly-ground black pepper - to taste

  10. Chopped parsley leaves - for garnish

  1. In a skillet, cook olive oil and garlic over moderate heat 2 minutes. Add thyme and radicchio and cook another minute. Add beans and toss with radicchio and garlic to combine. Season beans with salt and pepper. Warm beans through, 2 minutes, then serve. Garnish with extra sprigs of fresh thyme or chopped parsley.
