  2. SUPER-BOWL CHILI

  6. 2 lb Steak, cheap

  7. -(not too fatty)

  8. 1 lb Tomatoes, stewed

  9. 1 lb Tomatoes, whole

  10. 1/2 lb Tomato sauce

  11. 1 c Water (or beer)

  12. 1/4 c Chili seasoning

  13. -(*see note below)

  14. 1 lg Red onion,

  15. 2 Garlic cloves,

  16. -minced or crushed

  17. Jalapeno peppers

  18. -(fresh), seeded and -minced (2-6)

  19. Arbole or serrano

  20. -peppers (dried),

  21. -whole (2-6)

  22. 3 Anaheim or California

  23. -(large) chilis,

  24. -chopped coarse

  25. 1 Bell pepper, red or -green

  26. 2 tb Brown sugar

  27. 1 t Salt

  28. 2 ts Black pepper

  29. 4 tb Masa flour

  30. 2 c Pinto beans, cooked

  31. Trim the meat of all visible fat. If there is a large

  32. strip of fat on one side of the meat, save it whole.

  33. Cut meat into 1/4-inch cubes and brown it in a frying

  34. pan.

  35. In a large chili pot, place tomatoes, tomato sauce and water or beer. Bring to a slow boil. Add the meat,

  36. chili seasoning, onion, garlic, peppers, sugar, salt

  37. and pepper. If you are using the optional bell pepper,

  38. cut it into 1-inch strips and add them now. If you

  39. have that large piece of steak fat, add it now; if

  40. not, add about 1 T of cooking oil. Cover and reduce

  41. heat, simmer at least one hour (two to three is

  42. better) stirring occasionally. At the end of the

  43. simmering remove and discard the piece of steak fat.

  44. NOTES:

  45. A hearty (and hot) Texas-style chili -- This is a

  46. chili traditional in our Super-Bowl Sunday

  47. festivities. It has won several "no holds barred" (non

  48. ICS) chili cookoffs where there are no specific rules.

  49. It is the result of countless changes and adjustments

  50. of a small group of chili aficionados (aka

  51. chiliheads). Note: there is a range of peppers

  52. specified, you may adjust the "temperature" of the

  53. resultant chili, mild if you use the low end, or nuclear if you use the high end (we do!). Yield:

  54. 6-8. * Mix the masa flour with about 1/4 cup water and add

  55. to chili pot along with the pinto beans (or any kind

  56. 30 minutes. Serve.

  57. If you have made the nuclear version, make sure there

  58. is plenty of beer on hand.

  59. For chili seasoning, we make up batches consisting

  60. 8 parts chili powder,

  61. 2 parts ground cumin, and part crushed (not ground) cayenne peppers.
