  1. 2 cups brown lentil s, washed and picked over

  2. 1 cup hulled barley

  3. 1 somked ham shank

  4. 2 carrot s, chopped

  5. 3 stalks celery , chopped

  6. 1 onion , chopped

  7. 1 bay leaf

  8. Water to cover

  9. Salt and pepper to taste

  1. For more flavor, saute chopped vegetables in a small amount of canola oil before adding the rest of the ingredients.

  2. Othewise, throw everything in a pot, bring to a boil, cover and turn down to a simmer. Cook until lentils and barley are tender, about 45 minutes. Remove soup from heat. Remove ham shank and let cool. Slice meat from the bone and chop, removing fat, gristle, and skin. Return chooped meat to pot. Taste and add more salt and pepper to taste.
