  1. for Terrapin Soup Recipe

  2. 1 quart chicken or white-stock

  3. 1 pint terrapin meat (turtle)

  4. 1 cup cream

  5. 2 hard-boiled egg yolks

  6. 2 tablespoons butter

  7. 1 tablespoon rice flour

  8. 1/2 teaspoon salt

  9. 1/2 saltspoonful paprika

  10. A blade of mace

  11. 1/2 glass madeira or sherry

  1. Simmer the terrapin meat for half an hour in the stock, adding the salt, mace, and paprika.

  2. Mash the egg yolks smooth and add with the hot cream.

  3. Rub together the rice flour and butter until smooth, mix with a little of the hot liquor, then stir it into the soup; let it boil a few minutes and add the wine.

  4. Serve with dry, plain boiled rice, rice-balls, or egg-balls. .
