    1. 10 lb Chopped melon

    2. 2 Lemons

    3. 2 qt Cold water

    4. 1/4 lb Preserved ginger or ginger

    5. -root

    6. 10 lb Sugar

    1. Pare watermelon.

    2. Discard rind and all of the pink portion.

    3. Grind white portion through food chopper, using the coarse knife.

    4. Use the following proportions: Combine melon and water.

    5. Cook slowly until melon is clear.

    6. Add sugar, sliced lemon, and ginger, cut in small pieces.

    7. Cook slowly until thick.
