  1. 5 peeled shallot s

  2. 2 whole heads of garlic , peeled

  3. 1 tsp minced fresh galangal

  4. 1 tbs coriander seeds

  5. 1 tsp cumin

  6. 1 tsp shrimp paste

  7. 1 tbs sliced fresh lemongrass

  8. 4 dried red phrík shíi fáa (sky pointing chillies)

  9. 4 green peppercorn s

  10. 2 clove s

  11. 1 tsp salt

  1. Slice open the dried chillies, shake out and discard the seeds and soak the chillies in warm water until soft and flexible.

  2. Roast all other ingredients, one at a time, in a dry skillet or wok until aromatic and only slightly browned. Grind and mash all ingredients together in a mortar until a thick red-brown paste is formed.
