  1. 2 cups Cornmeal

  2. cup Whole wheat flour

  3. teaspoon Lite salt or less

  4. teaspoon Baking soda

  5. 1 teaspoon Baking powder

  6. 1 tablespoon Brown sugar

  7. 1 each Egg white

  8. 1 tablespoon Canola oil

  9. 2 cups Buttermilk(low fat)

  1. Preheat oven to 425. In a large bowl, stir together dry ingredients. In another bowl mix the wet ingredients. Combine the two and stir only until they are mixed. Turn into an 8-by-8-inch lightly oiled pan. Bake for 20-25 minutes.

  3. Add more buttermilk for a moister product. Grated carrots, whole kernel corn or snipped herbs may also be added.
