  1. 3 pounds russet potatoes, peeled and cubed

  2. 1/4 cup (4 tablespoons or 1/2 stick) butter

  3. 2 cups finely chopped sweet onion

  4. 1/2 cup sour cream

  5. 3/4 cup orange juice

  6. 1-1/2 teaspoons kosher salt or to taste

  7. 1/4 teaspoon ground white pepper

  8. Orange zest for garnish

  1. Boil the potatoes in salted water until tender. Drain well.

  2. Meanwhile, saute the sweet onions in the butter until lightly caramelized and golden. Remove from heat and let cool for 2 minutes. Whisk in the sour cream and orange juice.

  3. Add the onion mixture, salt, and pepper to the cooked potatoes and mash by hand until well-combined. Garnish with orange zest to serve.

  4. Yield: 8 servings
