  1. 4 tablespoons olive oil

  2. 1 onion, chopped

  3. 3 tomatoes, chopped

  4. 1 to 2 tablespoons tomato puree

  5. salt and freshly ground black pepper to taste

  1. In a large frying pan over medium heat, cook onion in olive oil until translucent. Stir in tomatoes, cook until juice begins to thicken. Stir in tomato purée, salt and pepper. Reduce heat and simmer 15 minutes more, until rich and thick.
