  1. 500 g dark chocolate , or 625g milk /white chocolate finely chopped (or chips )

  2. 500 mL cream

  3. 1T corn syrup

  4. vanilla , coffee , cointreau, kirsch , Frangelico , any flavoring desired.

  1. Boil 250mL cream with corn syrup.

  2. Pour over chocolate and let sit for around 3-5 minutes Gently stir with whisk until incorporated. Voila, Smooth Glossy Ganache!

  3. Let sit until room temp MEANWHILE... whip up cream (sometimes i use a packet of whip it too, this works well when you are using the mousse as a filling for a cake!)

  4. When ganache is cool, fold into whipped cream with whisk and pour into ramekin/bowl/pastry/whatever!

  5. Sets in about 25-30 minutes
