  1. 1 1/2 lbs. boneless pork center loin, diced

  2. 1 tsp. sesame oil

  3. 1 tbsp. grated fresh ginger root

  4. 3 minced garlic cloves

  5. 1/2 cup sliced green onions

  6. 1/2 cup carrots, peeled and sliced

  7. 1 red bell pepper, diced

  8. 1/4 lb. snow peas, cleaned

  9. 1 1/2 cups pineapple juice

  10. 4 tsps. cornstarch

  11. 4 tbsps. rice vinegar

  12. 4 tbsps. soy sauce

  13. 3 1/2 tbsps. brown sugar

  1. In wok, heat sesame oil over high heat.

  2. Stir-fry ginger, garlic, green onions, carrots and red pepper for 3-5 minutes, until vegetables are crisp-tender.

  3. Add pork and stir-fry for 3 minutes. Add snow peas and pineapple juice; heat through.

  4. In small bowl stir together cornstarch, vinegar, soy sauce and brown sugar; stir this mixture into wok and cook and stir until mixture comes to a boil. Serve hot.
