  6. 4 lb Lean beef from shank

  7. 2 lb Bone

  8. 2 qt Cold water

  9. 1/2 c Diced celery

  10. 1/2 c Diced carrots

  11. 1/2 c Diced turnips

  12. 1/2 c Diced onions

  13. 4 Cloves

  14. Salt

  15. Dice meat. Crush bone. Add water and cloves. Heat

  16. slowly to boiling. Cover. Simmer 5 hours. Season to

  17. taste. Add vegetables. Simmer 1 hour. Strain. simmer

  18. until broth is reduced to 6 cups. Cool. Remove fat.

  19. Reheat bouillon. 6 servings.
