  3. 2 pounds pork tenderloin

  4. 1/4 cup oil -- vegetable

  5. 2 cloves garlic -- halved

  6. 1/4 cup carrot -- chopped

  7. 1/4 cup lime juice

  8. 1/4 cup tequila

  9. 1 teaspoon salt

  10. 1 teaspoon oregano -- dried

  11. 1 teaspoon thyme -- dried

  12. 1/4 teaspoon pepper

  13. 4 tomato -- chopped

  14. 1 onion -- chopped

  15. 1 bay leaf

  1. Spread mustard over pork tenderloin. Heat oil and garlic in 10" skillet until hot. Cook pork in oil over medium heat until brown. Remove garlic. Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simer until pork is done, about 30 min. Remove bay leaf.
