  9. 1 stick butter

  10. 1/2 cup sugar

  11. grated zest of 1 lemon

  12. 1 tablespoon dark rum

  13. 2 egg whites

  14. 1 cup ground almonds

  15. 6 tablespoons flour

  16. glaze:

  17. 2/3 cup seedless raspberry preserves

  18. 1 tablespoon kirsch

  19. Preheat the oven to 350 degrees.

  20. Cream the softened butter and add the sugar in a stream. Continue beating until

  21. the butter/sugar whitens. Beat in the zest and rum, then the egg whites, one a

  22. t a time, beating smooth between each addition. Mix the almonds and flour toget

  23. her and stir them

  24. into the batter by hand.

  25. 1-inch mounds using a 1/2-inch plain tub

  26. 12 to 15 minutes.

  27. For the glaze:

  28. Bring the preserves and the Kirsch to a boil in a small pan over medium heat, s

  29. tirring occasionally, until slightly thickened. Apply glaze while it is still v

  30. ery hot.
