  1. 1 onion, thinly sliced

  2. 2 tablespoons butter

  3. 10 ounces cooked lima beans

  4. 1 teaspoon minced parsley

  5. 1 tomato, peeled, 1/4-inch dice salt and pepper to taste

  6. 8 eggs

  7. 3 tablespoons heavy cream

  8. 2 tablespoons grated Parmesan cheese

  1. Preheat oven to 350° F. In a small skillet, saute the onion in the butter until tender. Stir in the beans, parsley, and tomato and correct seasoning with salt and pepper. Heat until hot. Divide among 4 heated egg dishes and add 2 eggs to each. Spoon the cream over the yolks and sprinkle with cheese. Bake until set.
