  2. 1 large cucumber , peeled, seeded and diced

  3. 5 scallions, trimmed and sliced thinly

  4. 2 mangoes, peeled, pitted and chopped

  5. 1 jalapeno, stemmed and minced

  6. 1/3 cup minced cilantro leaves Salt, to taste
