  2. Cake:

  3. 1 1/2 cups brown sugar

  4. 4 large eggs

  5. 1 1/2 cups peeled, grated carrots

  6. 1 1/3 cups vegetable oil

  7. 2 1/4 cups all purpose flour

  8. 2 1/2 tsp. ground cinnamon

  9. 1 1/2 tsp. baking soda

  10. 1 tsp. salt

  11. Frosting:

  12. 3 ounces cream cheese, softened

  13. 1/4 cup butter, softened

  14. 2 1/4 cups sifted powdered sugar

  15. 1 tsp. finely grated orange peel

  1. For the Cake:

  2. Preheat oven to 350 degrees. Grease the inside of a 13x9 inch baking pan. Combine the brown sugar and eggs in a large bowl and beat until light and fluffy. Blend in the carrots and oil. Stir together the flour, cinnamon, baking soda and salt in a medium bowl. Gradually beat the flour mixture into the batter. Pour the batter into the prepared pan and bake about 40 to 45 minutes until a toothpick comes out clean. Transfer the pan to a rack and cool the cake completely.

  3. For the Frosting:

  4. Combine the cream cheese and butter in a large bowl and beat until well blended. Gradually add the powdered sugar and orange peel and beat until smooth. Spread the frosting over the top of the cooled cake. Cut the cake into squares and serve.
