  8. 1 1/2 pounds Fresh Peaches --see note

  9. 1 1/4 cups Sugar

  10. 2 tablespoons Sugar

  11. 1/8 teaspoon Salt

  12. 1/4 teaspoon Cinnamon

  13. 1/4 teaspoon Nutmeg

  14. 3 tablespoons Flour

  15. 4 tablespoons Butter

  16. 1 cup Heavy Cream -- Whipped

  17. Pastry

  18. 6 cups sliced peaches. Prepare pastry for 8 single crust

  19. pie. Set aside. Sprinkle lemon juice over peach slices in large bowl. Mix 1

  20. 1/4 cup sugar with the salt, nutmeg, cinamon and flour. Add to peaches. Toss

  21. until evenly coated. Spread in 1 1/2 quart baking dish. Dot with butter. Roll

  22. out pastry to to cover dish with 1 1/2 inch overhang. Press pastry to edge of

  23. 3 vents in top. Sprinkle with remaining sugar. Bake

  24. 450 degrees, then reduce heat to

  25. 350 degrees and bake

  26. 30 minutes
