  1. 1 pie shell, baked

  2. 1 1/2 c. sugar

  3. 6 tbsp. cornstarch

  4. 2 c. water

  5. 1/3 c. lemon juice

  6. 3 eggs, separated

  7. 3 tbsp. butter

  8. 1 1/2 tsp. lemon flavoring

  9. 2 tsp. vinegar, white

  1. Beat eggs and lemon juice together and add to sugar, cornstarch and water. Cook until thick. Add lemon flavoring, butter and vinegar. Pour into baked pie shell and top with the following meringue: 3 egg whites and 1 (7 oz.) jar marshmallow creme. Beat egg whites until stiff. Gently fold in marshmallow creme until mixed well and then beat at high speed for 1 minute. Spread on lemon filling and bake at 350 degrees for 10 minutes until golden brown.
