  1. 1 cup rolled oats

  2. 3/4 cup all-purpose flour

  3. 1 teaspoon baking powder

  4. 1 teaspoon baking soda

  5. 2 medium bananas, mashed

  6. 1/4 cup granulated sugar

  7. 2 teaspoons vanilla extract

  8. 2 teaspoons banana extract

  1. Preheat oven to 375°F (190°C).

  2. In a medium mixing bowl, combine oats, flour, baking powder and baking soda. Mix well. Add bananas, sugar, vanilla and banana extract; stir until blended.

  3. Drop batter by rounded teaspoonfuls onto a nonstick baking sheet.

  4. Bake 8 to 10 minutes, until bottoms of cookies are lightly browned. Remove cookies to a wire rack to cool.
