  4. 1 stalk celery

  5. 1 slice onion

  7. Yolks of 3 hard-boiled eggs

  8. 1/3 cup cracker crumbs

  9. Breast meat from a boiled chicken

  10. 2 cups scalded milk

  11. 1/2 cup cold milk

  12. 3 tablespoons butter

  13. 3 tablespoons flour

  1. Cook stock with seasonings twenty minutes.

  2. Rub yolks of eggs through sieve.

  3. Soak cracker crumbs in cold milk until soft; add to eggs.

  4. Chop meat and rub through sieve; add to egg and cracker mixture.

  5. Then pour milk on slowly, and add to strained stock; boil three minutes.

  6. Bind with butter and flour cooked together. .
