  1. 10 c chopped zucchini

  2. 4 c " onion

  3. 5 T table salt

  4. 1 green &

  5. 1 red pepper chopped

  6. 2 1/4 c cider vinegar

  7. 4 1/2 c sugar

  8. 1 T cornstarch

  9. 1 t nutmeg

  10. 1 t turmeric

  11. 2 t celery seeds

  12. 1/2 t black

  1. Day 1 Run zucchini and onion through food processor with metal blade till coarsely chopped. Put into very large non-reactive bowl and salt. Cover with plastic wrap and let sit overnight at room temp. Day 2 Line colander with cheesecloth, add zucchini and onions. Drain liquid, rinse with cold water. Squeeze out as much water as possible. Start boiling water bath. Mix all ingredients in a large pot and cook 30 mins. Please take care not to get turmeric on ANYTHING!!! It will NEVER come out!! Fill and seal in pt jars. Process in boiling water bath 5 mins. Remove and cool on dry towel out of drafts. Check seals. This is a great remedy for an overabundance of zucchini. It doesn't matter if they aren't the prettiest, or got away from you and grew way too large!!! You will also find that your neighbors no longer run in the other direction when they see you coming!!!
