  1. 1 whole egg

  2. 3 egg whites

  3. 2 TBSP. salsa, divided

  4. 1/2 green pepper

  5. 1 slice onion, chopped

  6. 1 pita

  7. 1 slice reduced-fat cheddar cheese

  8. In a small mixing bowl, lightly beat egg and egg whites. Add 1 tablespoon salsa, blend well.

  9. Lightly coat skillet with cooking spray. Saute diced bell pepper and onion for 2-3 minutes until softened. Add the egg mixture and cook wtih the vegetables stirring occasionally, until set.

  10. Place pita on a plate and spoon egg mixture on top. Top with cheese and microwave until cheese is melted.

  11. Top with remaining salsa.
