  1. 2 teaspoon(s) sugar

  2. 1/2 teaspoon(s) kosher salt

  3. 1 tablespoon(s) coarsely chopped fresh ginger

  4. 1 small serrano or jalapeño pepper , coarsely chopped

  5. 1 clove(s) garlic , crushed and peeled

  6. 2 cup(s) lightly packed fresh mint leaves

  7. 2 tablespoon(s) rice-wine vinegar

  8. 1 teaspoon(s) canola oil

  1. Place sugar and salt in a food processor. With the motor running, drop ginger, peppers and garlic through the feed tube; process until very finely chopped. Add mint and pulse until finely chopped. Add vinegar and oil and pulse to mix. Transfer to a small serving bowl. Serve immediately.
