  1. 1 pkg. refrigerated cheese TORTELLINI

  2. 1/2 cup ITALIAN DRESSING or mixture of EVOO/ GARLIC POWDER / S&P / HERBS /LEMON JUICE

  3. 2 clove s minced GARLIC

  4. 1 can diced TOMATOES, plus juice

  5. 3/4 - 1 lb. cooked cleaned medium SHRIMP

  6. 1 bag BABY SPINACH

  7. 1/4 cup fresh BASIL

  8. 2 TBL PARMESAN CHEESE

  1. Cook tortellini, set aside few tablespoons of pasta water, and drain tortellini.

  2. Heat dressing in pan over med-high heat. Add garlic, cook 1 min.

  3. Add tomatoes, shrimp, 2 TBL pasta water & mix well. Bring just to boil, stir in spinach, reduce heat, cover.

  4. Simmer 1 – 3 minutes or until spinach wilts, stir occasionally.

  5. Stir in tortellini and basil, simmer uncovered, until sauce thickens (few minutes).

  6. Serve, topped with cheese.
