  1. 1 package (18-1/4 ounces) yellow cake mix

  2. 1/2 cup butter, softened

  3. 2/3 cup water

  4. 3 eggs

  5. 1 can (8 ounces) crushed pineapple, drained

  6. 1 cup flaked coconut

  7. 1 cup chopped pecans

  8. 1 teaspoon rum extract

  9. 1 teaspoon coconut extract

  1. In a large bowl, beat cake mix and butter. Add the remaining ingredients. Fill greased or paper-lined muffin cups half full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Yield: 2 dozen.
