  2. 6 ounce(s) yellow onions , med. dice

  3. 4 ounce(s) Medium carrots , peeled, med. dice

  4. 4 ounce(s) celery , med. dice

  5. 1 1/2 ounce(s) fresh garlic , minced

  6. 2 teaspoon(s) dry parsley

  7. 2 teaspoon(s) kosher salt

  8. 1/2 teaspoon(s) black pepper

  9. 1/4 teaspoon(s) red pepper flakes

  10. 2 dry bay leaves

  11. 8 ounce(s) potatoes , peeled, med. dice

  12. 2 ounce(s) red wine vinegar , seperate,

  13. 2-1 oz portions

  14. 8 ounce(s) Gaspars Brand Chourico , internet order at Gaspars Sausage Company

  15. 1 tablespoon(s) olive oil

  16. 2 quart(s) water

  17. 2 teaspoon(s) dry oregano

  1. In Med. pot, heat olive oil over Med. heat

  2. Peel and slice Chourico into 1/4 thick slices

  3. To pot- add Chourico, onions, celery, garlic and carrots. Cover and sweat until onions are wilted.

  4. minutes

  5. Add all seasonings and herbs. Cook 3-4 minutes.

  6. Add 1/2 of the red wine vinegar. reduce by 1/2.

  7. Add diced potatoes and water. Bring to boil over high heat, Add Kale, reduce to simmer.

  8. At simmer, cook 45-60 minutes or until Kale is tender.

  9. re-adjust seasoning & vinegar to taste.
