  1. 2 cups 474ml Elbow macaroni

  2. 2 teaspoons 10ml Olive oil

  3. 1 Garlic clove - sliced

  4. 1 Onion - chopped (large)

  5. 1 Sweet green or red pepper - chopped (large)

  6. 1 cup 237ml Sliced mushrooms

  7. 8 oz 227g Ground turkey breast

  8. 1/2 cup 118ml Skim milk

  9. 1 Reduced-fat cream-of-mushroom soup - (10 1/2 oz)

  10. 1/8 teaspoon 0.6ml Freshly-ground black pepper

  11. 1 tablespoon 15ml Snipped fresh parsley

  12. 1 oz 28g Extra-sharp Cheddar cheese - shredded

  1. Recipe Instructions Cook the macaroni for 12 minutes, drain and set aside. Heat the oil in a nonstick pan and saute the garlic, onions, green or red peppers and mushrooms until softened. Add the ground turkey and stir occasionally until the meat changes color. Combine the macaroni, turkey mixture, milk, soup, pepper and parsley in a 2-quart casserole coated with nonstick cooking spray. Top with the cheddar and bake, uncovered, at 375 degrees for 20 minutes.
