  6. 2 1/2 cups fully cooked low-fat ham -- cubed

  7. 1/3 cup onion -- chopped

  8. 2 cloves garlic -- minced

  9. 1 teaspoon dried oregano

  10. 1 teaspoon dried thyme

  11. 1/4 teaspoon cayenne pepper

  12. 1/4 teaspoon pepper

  13. 1 tablespoon cooking oil

  14. 1/3 cup cider or red wine vinegar

  15. 4 cups cooked rice

  16. 3 cups cooked chicken -- diced

  17. 2 ribs celery -- thinly sliced

  18. 1/2 cup green bell pepper -- julienned

  19. 1/2 cup sweet red bell pepper -- julienned

  20. 2 green onions, with tops -- sliced

  21. 1 pint cherry tomatoes

  22. In a skillet over medium heat, saute the first seven ingredients in oil until

  23. vegetables are tender. Remove from the heat; stir in vinegar. Cool for 5

  24. minutes. In a bowl, toss rice, chicken, celery, peppers and onions. Stir in

  25. the ham mixture. Cover and chill for at least 2 hours. Garnish with
