  1. Cookies: 2 1/2 c All-purpose flour

  2. 1 c Quick oats

  3. 1/2 ts Salt

  4. 1 ts Baking soda

  5. 1 ts Ground cinnamon

  6. 1/2 ts Ground cloves

  7. 2 ts Grated lemon zest

  8. 1 c Dark brown sugar

  9. 3/4 c Salted butter; softened

  10. 1 lg Egg

  11. 1/2 c Unsweetened applesauce

  12. 1/2 c Maple syrup

  13. 1 c Fresh and tart apples

  14. Peeled and finely chopped 1 c Currants

  15. Topping: 1/2 c Toasted quick oats

  16. 2 tb Brown sugar

  17. 300 degrees. In a medium bowl, mix flour, oats, salt, soda, cinnamon, cloves and zest. Mix well with whisk and set aside. Cream sugar and butter together in a mixing bowl with a mixer. Add egg, applesauce and maple syrup. Beat at medium speed until smooth. Add flour mixture, fresh apples and currants. Blend on low speed just until combined. Do not overmix. Dough will be soft. Drop by rounded tablespoons onto ungreased baking sheets about 2 inches apart. Topping: Mix oats and brown sugar. Sprinkle cookies with mixture. Bake

  18. 25 minutes or until bottoms are golden brown.
