  1. Salt and pepper turkey inside and out. Place in pan with 6 cups of water. Cover tightly with heavy duty foil. Preheat oven to 500 degrees. Bake 14 - 18 pound turkey for one hour. Bake 20 - 25 pound turkey for 1½ hours. Turn off oven and DO NOT open oven door for 12 hours. After 12 hours have passed, take out the best, most moist turkey you have ever eaten.
