  1. Citrus Salsa

  2. 1 Orange - peeled, sectioned, (medium)

  3. And chopped into 1" pieces

  4. 1/2 cup 73g / 2.6oz Diced pineapple chunks

  5. (either fresh or used canned in

  6. Its own juice, juice drained)

  7. 1/4 cup 36g / 1 1/3oz Diced mango

  8. 2 Jalapeño peppers - minced

  9. 3 tablespoons 45ml Orange juice

  10. 1 tablespoon 15ml Diced red pepper

  11. 2 teaspoons 10ml Sugar

  12. 1 tablespoon 15ml Minced cilantro

  13. Citrus Swordfish

  14. 1 1/2 lbs 681g / 24oz Swordfish steaks

  15. 1/2 cup 118ml Fresh orange juice

  16. 1 tablespoon 15ml Olive oil

  17. 1/4 teaspoon 1 1/3ml Cayenne pepper

  18. 1 tablespoon 15ml Pineapple juice concentrate

  1. Combine all ingredients for the salsa and set aside.

  2. In a nonreactive pan, mix the orange juice, olive oil, cayenne pepper, and pineapple juice concentrate. Marinate the swordfish in the mixture for 30 minutes.

  3. Prepare an outside grill with oiled rack set 6 inches from the heat source. On a gas grill, set the heat to medium-high.

  4. Grill the swordfish on each side for a total time of about 12 to 15 minutes, until opaque in the center.

  5. Serve the grilled fish with the salsa.

  6. This recipe yields 6 servings. Serving size: 3 to 4 ounces.
