  1. 6 tablespoons 90ml Butter or margarine

  2. 2 tablespoons 30ml Flour

  3. 3 cups 187g / 6.6oz Cooked lobster meat

  4. 1/8 teaspoon 0.6ml Nutmeg

  5. Paprika

  6. 1 teaspoon 5ml Salt

  7. 3 tablespoons 45ml Sherry

  8. 3 Yolks

  9. 2 cups 474ml Milk or light cream

  10. Toast slices

  1. In double boiler top, melt butter; stir in flour, lobster, nutmeg, paprika, salt, sherry.

  2. Beat yolks slightly; add cream or milk; mix well.

  3. Slowly stir yolks into lobster; cook over hot water, stirring, until just thickened.

  4. This recipe is equally good with crab, shrimp or scallops, or a mixture.
