  1. c. flour

  2. 3/4 tsp. salt

  3. 1 tsp. baking soda

  4. 2 c. sugar

  5. 1 tsp. ground cinnamon

  6. 1 c. chopped pecans or walnuts

  7. 3 eggs, beaten

  8. 1 c. vegetable oil

  9. 2 c. mashed ripe bananas

  10. 1 (8 oz.) can crushed pineapple, drained

  11. 2 tsp. vanilla

  1. Combine first 5 ingredients; stir in nuts. Combine remaining ingredients; add to flour mixture, stirring just until dry ingredients are moistened. Spoon batter into greased and floured 8 1/2 x 4 1/2 x 3 inch loaf pans. Bake at 350 degrees for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove from pan and let cool on wire racks. Makes 2 loaves.
