  5. 1 lb "Long Life" egg noodles

  6. 8 qt Salted water

  7. 1/2 lb Spinach

  8. 4 Eggs

  9. 1 c Chicken broth

  10. 1 tb Dark soy sauce

  11. 1 ts Sesame oil

  12. 1/4 ts Salt

  13. 1 ts Cornstarch paste

  14. 2 Green onions, minced

  15. 1/4 c Boiled ham, slivered

  16. This dish is a traditional birthday snack in China.

  17. Preparation: Wash & trim spinach. Wash, then boil

  18. noodles; drain; divide among soup bowls. In same

  19. water, blanch spinach; drain; press dry; chop

  20. coarsely; put on noodles.

  21. Heat broth in sauce pan. Add soy sauce, sesame oil,

  22. salt & cornstarch paste to thicken slightly.

  23. Poaching Eggs: Put 4 cups of water in wok; bring to

  24. boil. Break eggs in ladle one at a time; poach for 2

  25. minutes. Place egg on spinach.

  26. Finishing: Pour hot soup over egg. Garnish with

  27. minced onion & ham. Serve. --
